I made these homenade minted lamb kebabs, as we had herbs in the fridge that would have gone to waste.
There are days when we all want ‘convenience’ foods and this was one of those days. However, we wanted to enjoy our food, so no going out to a kebab shop for us!
And I know the photo shows the ‘kebabs’ looking more like burgers. There are two reasons for this.
- The shape fits better in pitta bread and
- It’s less effort than trying to shape the meat onto skewers!
The recipe is sufficient for 4 people (smaller kebabs or larger kebabs for 2 people)
Ingredients
- 500g lamb mince
- 2 garlic cloves, crushed
- 1 inch piece of ginger, grated
- 1 medium onion, finely chopped
- handful of fresh parsley, mint and coriander leaves, chopped
- plenty of salt and pepper to season
- 1 egg
Method
Place all the ingredients in a large bowl and mix thoroughly.
When the lamb mince and herbs are well combined, shape into burger shapes, like the ones I made.
I made four smaller burger shaped kebabs, as they fit better into pitta bread halves.
Alternatively, you can shape the mixture around skewers.
I fried the ones I made, as it was quicker to cook. You can also grill them.
Ensure the kebabs are cooked through. It takes about 8-10 minutes, depending on how thick you make them.
Warm the pitta bread and once the kebabs are cooked, serve with salad. We also had coleslaw with ours (it wasn’t homemade), but hey life’s too short and I’m not perfect! ;0)
